Why is my Nougat Grainy/Sugary and not setting?
I made my Nougat (first time ever) 2 days ago. It's not setting and tastes grainy/sugary - plus now I can't get it out the glass dish which I sprayed.
Here is the recipe I used:
500ml sugar
200ml golden syrup
250ml cold water
3 egg whites
5 ml Vanilla Essence
Boil half the sugar with half the Syrup and half the water until it forms the soft ball stage, 118 - 120 degrees C. Beat egg whites till stiff, but not dry and slowly add the hot syrup, stirring continuously. While beating the mixture, boil the remaining half of the syrup mixture (sugar, water & syrup). Then slowly add this to the mixture, beating constantly. Add essence, nuts etc. Pour mixture into a shallow buttered pan. Leave to set for 1 or 2 days
