fruit cake recipe adjustments
I had an idea to use several recipes for fruit cake by averaging them for 8 servings. I have some sort of a resulting recipe but I'm not sure how it would turn out so culinary science people, could you lend me a hand?
I have this for amounts:
3/8 c cherries
1/4 c pineapple
1/4 c raisins
1/2 c dates
2 tbsp citron (which I plan on subbing lemon)
1 c pecans
1/4 c butter
2 eggs
1 c flour
1/4 tsp salt
1/2 c sugar
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp vanilla
What I'm looking for is 1st: is this a viable recipe? and 2nd: what sort of adjustments would you make? I'm not defending my method of creating this in the least because this is my first attempt at doing something like this.
